March-May lets you catch the city preparing for or celebrating Las Fallas, its most famous festival. It's cheaper than Madrid or Barcelona, with one of the best value-for-money ratios among Spain's major cities. It's the birthplace of paella, a dish that in its original form (with rabbit and chicken, not seafood) is truly authentic only in the Valencian countryside.
