Ostuni takes 1 day to see: the old town, with every house whitewashed on a hilltop that gleams visibly from miles away -hence its nickname, the «White City»- is the main reason to visit. May-September is best. It's mid-priced by Italian standards. The tradition of whitewashing houses with quicklime dates back to a 17th-century plague epidemic, when lime was found to act as a natural disinfectant, and the custom stuck for its looks even after losing its original purpose.
