Saumur needs 1 day: the white château over the Loire river, with views of the vineyards and the underground cellars carved into the local tuffeau rock where the town's sparkling wine is made, is the main walk. April-September is best. It's mid-priced by French standards. It's home to the Cadre Noir, one of France's most prestigious riding schools, with public exhibitions by riders trained in classical dressage since the 19th century.
